Orecchiette with Spinach & Garlic

A simple and quickly prepared pasta dish from Italy's Adriatic coast.

Step 1: Cook pasta according to directions on package. Just before pasta is al dente add the chopped spinach. Stir and cook until water returns to a boil. Drain pasta and spinach.


Step 2: While pasta is cooking, heat oil in a large sauce pan over a medium heat. Add garlic and cook for 2 to 3 minutes. Add the pasta and spinach to the pan; toss with two spoons and turn into warm serving dish. Serve with Parmesan at the table.

Ingredients:

  • 2 bunches (about 12 oz. each) spinach coarsely chopped
  • 12 ounces dry orecchiette pasta
  • 1/3 cup olive oil
  • 6 cloves garlic minced
  • ½ teaspoon dried red chili flakes
  • ½ cup Parmesan cheese
