Cremini Mushrooms and Rosemary Sprigs with 4 Cheese Ravioli

A tasty meal that is fairly quick and easy to make. Makes 3 serving, 562 calories per serving.

Step 1: Heat a large pot of salted water for ravioli


Step 2: Heat a saute pan over medium-high heat. Add 2 tablespoons of butter and the olive oil. When hot, add rosemary sprigs and mushrooms. Toss the mushrooms and season with salt and pepper.


Step 3: Add the ravioli to the boiling water. Cook the ravioli about one minute less than package instructions.


Step 4: Add the garlic and shallot to the pan. Toss and cook for 2-3 or until garlic and shallots are cooked through.

Ingredients:

  • 9 oz. fresh four cheese ravioli
  • 4 tablespoons butter (divided)
  • 2 tablespoons of olive oil
  • 8 oz. cremini mushrooms (sliced)
  • 4 cloves of garlic (sliced)
  • 1 large shallot (minced)
  • 2 sprigs of rosemary
  • 1/3 cup parmigiano regiano
  • salt
  • pepper

Step 5: Drain the ravioli and add to the saute pan. Add 1/3 cup of pasta water, remaining 2 tablespoons of butter and parmigiano. Take the rosemary sprigs out and toss until the sauce is creamy and emulsified.
