Step 1: Heat a large pot of salted water for ravioli Step 2: Heat a saute pan over medium-high heat. Add 2 tablespoons of butter and the olive oil. When hot, add rosemary sprigs and mushrooms. Toss the mushrooms and season with salt and pepper. Step 3: Add the ravioli to the boiling water. Cook the ravioli about one minute less than package instructions. Step 4: Add the garlic and shallot to the pan. Toss and cook for 2-3 or until garlic and shallots are cooked through. |

Step 5: Drain the ravioli and add to the saute pan. Add 1/3 cup of pasta water, remaining 2 tablespoons of butter and parmigiano. Take the rosemary sprigs out and toss until the sauce is creamy and emulsified. |
