Shrimp Scampi with Pasta

This goes well with crusty bread and a sugar snap pea salad.

Step 1: In a small sauce pan heat 3 tablespoons of olive oil with half of the minced garlic. When garlic begins to brown, remove from heat and set aside.


Step 2: Over a medium heat, melt butter in a large sauce pan or wok. Stir in green onions, remaining tablespoon of olive oil and garlic, lemon juice, and salt.


Step 3: When the butter starts to bubble, add the shrimp and cook, tossing occasionally, until the shrimp is pink - about five minutes.


Step 4: While the shrimp are cooking, cook and drain the pasta. In a warm serving dish, toss the pasta with the olive oil and garlic.


Step 5: Add parsley, lemon zest, and hot sauce to the shrimp and toss. Add the shrimp and its cooking sauce to the pasta and toss all the ingredients, making sure the pasta is coated with the shrimp sauce.

Ingredients:

  • 4 tablespoons olive oil, divided
  • 8 to 10 large cloves of garlic minced, divided
  • 6 tablespoons butter
  • 1 tablespoon minced green onion
  • 2 tablespoons lemon juice
  • 1/4 teaspoon salt
  • 3/4 pound medium raw shrimp (30 to 40 count)
  • 2 tablespoons minced fresh parsely
  • 1/4 teaspoon lemon zest
  • dash hot sauce
  • 12 ounces fresh linguini pasta
  • parmesan cheese

Step 6: Sprinkle grated parmesan over the dish and garnish with a couple sprigs of parsley.
