Simple Pork Shoulder Roast

Let the pork shoulder sit at room temperature for about 2 hours before roasting. After roasting, let stand for about 30 minutes to allow juices to redistribute throughout the roast.

Step 1: Preheat the oven to 425 degrees F.


Step 2: In a small bowl mix together olive oil, garlic, salt and pepper. Using a pastry brush, spread the mixture all over the pork shoulder.


Step 3: Set the meat on a rack set in a roasting pan. Roast for 20 minutes, then reduce the heat to 325 degrees F. Continue roasting until an instant-read thermometer inserted into the shoulder reads 185 degrees F., about 4 hours. Remove the roast from oven and let it stand until cool enough to handle, about 30 minutes.
