Summer Greens & Melon Salad

Step 1: Soak sliced red onion in ice water for half hour


Step 2: Pick herbs from stems and tear into bite size pieces if necessary. Wash and dry salad greens and herbs and add to a salad bowl.


Step 3: Drain and dry onion slices. Top salad greens with onions, melons, and sunflower seeds.


Step 4: With your hands, toss the greens with enough olive oil to making sure they are all lightly covered. Sprinkle with salt and pepper. Add vinegar to taste and toss.

Ingredients:

  • ½ cup red onion, cut into thin half-rounds
  • 4 cups spring mix greens
  • ¼ to ½ small cantaloupe cut into bite sized pieces
  • 1 cup lightly packed fresh herbs (basil, mint, parsley, cilantro)
  • 1 to 2 tablespoons extra virgin olive oil
  • 1 to 2 tablespoons white wine vinegar
  • Salt & freshly ground black pepper
  • ½ cup roasted and salted sunflower seeds
